Summery Falafel Salad

Ingredients

Main ingredients

14 Goodlife Falafels

1 pink grapefruit

1 orange

½ bunch mint leaves 

½ bunch coriander

¼ red cabbage

½ a small cucumber

150g bean sprouts

Handful unsalted peanuts

3 spring onions

For the dressing

1tbsp tahini

½ tbsp soy sauce

Juice of 1 lime

Method

  1. Preheat the oven to 200ºC/Fan 180ºC/Gas Mark 6 and cook the falafels according to packet instructions
  2. Peel and segment the grapefruit and orange
  3. Finely slice the cabbage and prep the cucumber into ribbons. Finely slice the spring onions
  4. When the falafels have 5 minutes left, add the peanuts to the oven tray. Lightly toast the peanuts, making sure they don’t burn.
  5. Place the dressing ingredients in a bowl and mix together. If the dressing is slightly thick, loosen with a little water.
  6. Once the peanuts are toasted, roughly chop and set aside.
  7. Place all the other ingredients into a bowl and mix together.
  8. Top with the chopped peanuts and drizzle over the dressing.
