Mushroom Kyiv, Roasted Broccoli and Lentil Bowl

Ingredients

2 Goodlife Mushroom & Spinach Kyivs

150g tenderstem broccoli

1 apple

1 medium carrot

1 tbsp apple cider vinegar

1 tin of green lentils

1 tbsp chopped parsley

2 tbsp pumpkin seeds

Method

  1. Preheat the oven to 200ºC/Fan 180ºC/Gas Mark 6. Place the kyivs on a lined baking tray and bake for 15 minutes.
  2. Meanwhile, wash the broccoli and add to a large bowl. Cover with boiling water and leave to stand.
  3. After the Kyiv has been in for 15 minutes, drain the broccoli and add it to the baking tray.
  4. Season the broccoli with a pinch of salt and return everything to the oven for a further 15 minutes.
  5. Meanwhile, grate the apple and carrot, add to a bowl with the apple cider vinegar and mix well.
  6. Drain the lentils and mix with the chopped parsley.
  7. Season well with salt and pepper.
  8. Split the lentils, apple and carrot between two bowls.
  9. Once the Kyiv’s are cooked, remove from the oven and leave to rest.
  10. Once cool enough to touch, carefully slice into pieces.
  11. Add the roasted broccoli and sliced Kyivs to the bowls and sprinkle with pumpkin seeds.
