Mushroom and Spinach Kyiv with Veggie Rice

Ingredients

2 Goodlife Mushroom & Spinach Kyivs

150g wholegrain rice, cooked and drained

1/2 red Pepper

1/2 yellow Pepper

1/2 courgette

1tsp extra virgin olive oil

Fresh thyme

Black pepper

Method

  1. Pre heat the oven to 200ºC/Fan 180ºC/Gas Mark 6. Place the Goodlife Mushroom & Spinach Kyivs onto a lightly oiled baking tray and cook in the centre of the oven for 20 minutes.
  2. While the kyivs are in the oven, cook the wholegrain rice as per the packet instructions, then drain and then set aside.
  3. Chop the peppers and courgette into small chunks and sauté for 5 minutes in the olive oil. Turn off the heat, stir in the cooked rice and season with black pepper and thyme.
  4. After 20 minutes, carefully remove the kyivs from the oven and serve alongside your rice and vegetable mix.
  5. Make sure the kyivs are cooked through and piping hot before serving.
