Falafel Shakshuka with Yoghurt & Flatbread

8 Goodlife Falafels

2 tsp olive oil

2 garlic cloves

1 medium onion

1 tsp cumin

1 tsp smoked paprika

1 red pepper

1 tin of chopped tomatoes

1/2 tsp salt

To serve:

Toast, pitta or flatbread

Method

  1. Pre-heat the oven to 200ºC/Fan 180ºC/Gas Mark 6. Place the falafels on a baking tray and cook for 15 minutes.
  2. Whilst the falafels cook, slice the onion and finely chop the garlic. Add to a medium-sized pan with the olive oil, cumin and smoked paprika. Cook over a medium heat until the onions are soft. 
  3. Slice the red pepper and add to the pan. Stir over the heat until the peppers are cooked through. 
  4. Add the chopped tomatoes and salt and mix well. Bring to a simmer, stirring well, then turn down the heat. Keep stirring until the tomatoes have reduced by a third.
  5. Season with salt and pepper to taste and serve with bread.
