Falafel Shakshuka with Yoghurt & Flatbread
Ingredients

8 Goodlife Falafels
2 tsp olive oil
2 garlic cloves
1 medium onion
1 tsp cumin
1 tsp smoked paprika
1 red pepper
1 tin of chopped tomatoes
1/2 tsp salt
To serve:
Toast, pitta or flatbread
Method
- Pre-heat the oven to 200ºC/Fan 180ºC/Gas Mark 6. Place the falafels on a baking tray and cook for 15 minutes.
- Whilst the falafels cook, slice the onion and finely chop the garlic. Add to a medium-sized pan with the olive oil, cumin and smoked paprika. Cook over a medium heat until the onions are soft.
- Slice the red pepper and add to the pan. Stir over the heat until the peppers are cooked through.
- Add the chopped tomatoes and salt and mix well. Bring to a simmer, stirring well, then turn down the heat. Keep stirring until the tomatoes have reduced by a third.
- Season with salt and pepper to taste and serve with bread.
