Falafel Flatbreads with Herby Salad & Tahini Harissa Drizzle

Ingredients

Main ingredients

10 Goodlife falafels

2 flatbreads

2 tbsp hummus


For the herby salad:

100g tomato, diced

1 baby gem lettuce, shredded

2 tbsp chopped parsley

2 tsp lemon juice

Pinch of salt

For the cabbage:

1/4 red cabbage, shredded

2 tbsp cider vinegar

Pinch of salt


For the tahini harissa dressing:

1 tbsp tahini

2 tsp harissa

1 tsp olive oil

2 tsp lemon juice

Water

Method

  1. Preheat the oven to 200ºC/Fan 180ºC/Gas Mark 6. Place the falafels on a baking tray and cook for 15 minutes.
  2. Meanwhile, add the cabbage to a small bowl. Season with salt and add the vinegar. Mix well and put to one side.
  3. Add all the salad ingredients to a bowl and mix everything together.
  4. Add all of the tahini harissa dressing ingredients, apart from the water, to a small bowl and whisk together. Add a teaspoon of water at a time until it becomes a drizzling consistency.
  5. Warm the flatbreads and spread with 1 tbsp hummus each. 
  6. Top with the herby salad, cabbage and falafel and drizzle with the tahini harissa dressing. 
  7. Sprinkle with the chopped parsley.
