Fakeaway Dirty Vegan Burger

Ingredients

1 Goodlife Spicy Beanburger 

1 vegan burger bun of your choice 

15g smoked vegan cheese, or a slice if you prefer 

15g vegan mozzarella 

½ red onion 

1 tbsp brown sugar 

½ tbsp red wine vinegar 

2 lettuce leaves 

1 gherkin 

For the burger sauce 

2 tbsp vegan mayo 

1 tbsp American mustard 

Chipotle hot sauce 

1 tbsp tomato ketchup 

1 tsp garlic granules 

2 gherkins, finely chopped 

Method

  1. Cook the burger in a preheated oven at 200ºC/Fan 180ºC/Gas Mark 6. Prepare the rest of the ingredients.
  2. Finely slice the onion. In a small saucepan, heat a drizzle of olive oil on a medium heat. Add the onions and soften for 10 minutes or so. Add in the sugar and vinegar and stir through the onions. Let the onions caramelise and allow to thicken.
  3. Meanwhile, to make the burger sauce, simply mix all the sauce ingredients together in a small bowl. Taste and adjust the spice or seasoning. 
  4. Heat a griddle pan ready to toast the bun. Tip the grated cheeses into a bowl. When the burger has a few minutes cooking time left, top the burger with the blended cheeses to melt. 
  5. Toast the bun and then start layering up the burger. Put a good dollop of sauce on the base, followed by the lettuce, then the blended cheese pattie. Top with the gherkin and finish with the onions, a little extra mustard if you want and the toasted bun lid. Best served with slaw and fries.
