Burger with Wasabi Slaw and Quick Pickles

Oven 180ºC

Ingredients

2 bean burgers

2 burger buns of your choice

¼ white cabbage

1 carrot

1 lime

1tbsp wasabi mayo

½ red onion, finely sliced

½ cucumber, sliced

125ml white wine vinegar

1tsp caster sugar

1tsp sea salt

2 large handfuls watercress

Method

  1. Preheat the oven to 200ºC/Fan 180ºC/Gas Mark 6, then cook the burgers according to the packet instructions.
  2. Place the vinegar, sugar and salt into a small bowl. Add the prepared onion and cucumber to the bowl and coat. Leave to pickle.
  3. Finely slice the cabbage and julienne the carrot. Use a mandolin or food processor for really fine slices.
  4. Next, place in a medium bowl with the juice of ½ the lime and the wasabi mayonnaise. Season with salt and pepper and mix well. Set aside.
  5. Once the burgers are cooked, half the burger buns and layer with wasabi slaw, the burger, pickles and top with a handful of watercress.
