Veggie Protein Ball Curry

Ingredients
300g Goodlife vegetable protein balls
4 garlic cloves
Thumb size piece of ginger
2 red chillies
Small bunch coriander
2 tbsp vegetable oil
2 tsp turmeric
1tbsp medium curry powder
2 banana shallots
4 curry leaves
1tsp mustard seeds
1tsp coriander seeds
1tsp cumin seeds
180g tenderstem broccoli
2 big handfuls baby spinach
400g coconut milk

Method
- Cook the Goodlife vegetable protein balls according to the pack instructions.
- Once they are in, start making the curry paste. Peel the garlic and ginger, and roughly chop with the chilli and the coriander stalks, reserving the leaves for later. Place in a blender with a tbsp of the oil and the dried spices and blitz into a paste.
- Finely slice the shallots and then in a shallow pan with the remaining oil, fry for 5 minutes or so until soft. Add in the curry leaves and all the seeds and fry for another minute then add in the curry paste and cook for another 5 minutes until all the aromatic smells come out.
- Blanch the broccoli for a few minutes and add to the curry pan to coat. Stir in the coconut milk and bring to a boil. Stir in the protein balls and spinach and keep stirring until the spinach starts to wilt.
- Serve with the picked coriander leaves, extra chilli if you like it spicy, and fluffy rice if you wish.
