Thai Firecracker Bowl

Ingredients
- 2 GoodLife Vegetable Firecracker Melts
- 2 tsp olive oil
- 1 (400g) can butter beans, drained
- 1 tsp of za’atar
- 1 tsp of smoked paprika
- 6-8 baby carrots, scrubbed
- handful of rainbow chard, chopped
- 2 ripe tomatoes, chopped
- ½ cucumber, sliced
- 2 tbsp chopped fresh coriander
Peanut Sauce:
- 1 clove of garlic, chopped
- 80g crunchy peanut butter
- 1/2 red chilli, deseeded
- 2 limes, juice squeezed
- 1 tbsp reduced-salt soy sauce
- 1tbsp tamarind paste
- 1tbsp olive oil
- 2 tsp fish or soy sauce
Method
- Preheat the oven to 200oC/ Fan 180oC /Gas 6. Place the Good Life Firecracker Rice cakes on a baking tray and bake for 25 minutes.
- To make the peanut sauce: add all the ingredients to a blender and blitz until a smooth sauce from. If it is still thick, add a touch of hot water. Drizzle half the sauce around the base and sides of two serving bowls, so that it is coated.
- Add butterbeans to a non-stick frying pan with the olive oil, adding za’atar and chilli flakes and 2 tbsp water. Cook on a low heat for 5 minutes, stirring occasionally until hot and coated in sauce then set aside.
- Arrange the carrots, shredded chard, tomatoes, cucumber and beans in the bowls, top with the Firecracker Melt, and coriander. Spoon a little more sauce over and serve.
