Spicy Bean Burger Ciabatta

2 Goodlife Spicy Bean Burgers
2 Half Ciabatta
1 Beef Tomato
1 Avocado
Lime Juice

For the corn salad
Corn on the Cob, cooked, stripped and cooled
1 Vine Tomato
1/4 Red Pepper
1 Spring Onion
Extra Virgin Olive Oil
Fresh Coriander


Pre heat oven to 200°C / Fan 180°C / Gas 6. Remove all packaging and place the Goodlife Spicy Beanburgers onto a baking tray. Cook in the centre of the oven for 22-25 minutes.

While the burgers are cooking, make the corn salad by chopping the tomato, pepper and spring onion and mixing them with the corn, olive oil and chopped coriander.

Once they’re cooked, carefully remove the burgers from the oven.

Cut your ciabatta in half. On one side, stack the houmous, lettuce and tomatoes, then add the burger, pop the avocado on top and finish with a squeeze of lime juice, before adding the other half of the ciabatta. Serve the corn salad on the side.

All ovens vary, so just make sure the burgers are piping hot before serving.
