Paella Slice with smashed avo

Serves 2

Recipe time: 20 minutes



2 Paella slices

Handful washed baby leaf spinach

1 avocado

1 small mild red onion

Lemon juice

1 garlic clove

Olive oil

2 Eggs




  1. Place the Paella slices onto a baking try and place into a pre-heated oven. Cook according to pack instructions.  

  2. While the Paella slices are cooking, thinly slice the red onion and roughly chop the chives

  3. Scoop out the stone from the avocado and mix together with the sliced red onion to create your smashed avocado.

  4. Bring to boil a pan of water and once ready, drop in your eggs for poaching. For a soft poached egg, leave in the water for approximately 2 minutes.

  5. To serve, add a good serving of the smashed avocado on top of the paella slice, followed by your poached egg and chopped chives.  Add spinach leaves to the side and enjoy
