Burrito burger tacos

Makes 6 tacos (serves 2-3)

Ingredients
2 Goodlife Burrito burgers
6 mini soft tacos
Small tin or pack refried beans
1 small red onion, very thinly sliced
Handful of salad leaves
1 or 2 spring onions, thinly sliced
Few sprigs fresh coriander
To serve
Soured cream or vegan alternative
Fresh chives
Salsa
Lime wedges
Tortilla chips
Method
- Preheat the oven then cook the burgers according to the pack instructions.
- Meanwhile, heat up the refried beans, warm the wraps and mix the chopped chives into the soured cream.
- To assemble, spread a little of the refried beans onto each taco, then add a few leaves and some red onion.
- Break the burgers into chunks and divide between the tacos. Sprinkle over the coriander and spring onions and serve with the soured cream, salsa and tortilla chips on the side.
