Beanburger with wasabi slaw

Ingredients
- 2 bean burgers
- 2 burger buns of your choice
- ¼ white cabbage
- 1 carrot
- 1 lime
- 1tbsp wasabi Mayo
- ½ red onion, finely sliced
- ½ cucumber, sliced
- 125ml white wine vinegar
- 1tsp caster sugar
- 1tsp sea salt
- 2 good handfuls watercress
Method
- Preheat the oven and then cook the burgers according to the packet.
- Place the vinegar, sugar and salt into a smallish bowl. Add the prepared onion and cucumber to the bowl and coat. Leave to pickle.
- Finely slice the cabbage and julienne the carrot. If you have a mandolin or a food processor, you can use those for really fine slices.
- Next, place in a medium bowl with the juice of ½ the lime and the Wasabi Company Mayonnaise. Season with salt and pepper and mix well. Set aside.
- Once the burgers are cooked, half your buns and layer with wasabi slaw, the burger, the pickles and top with a handful of watercress.
