Beanburger with wasabi slaw

Cooking time: 25 minutes




  • 2 bean burgers
  • 2 burger buns of your choice
  • ¼ white cabbage
  • 1 carrot
  • 1 lime
  • 1tbsp wasabi Mayo
  • ½ red onion, finely sliced
  • ½ cucumber, sliced
  • 125ml white wine vinegar
  • 1tsp caster sugar
  • 1tsp sea salt
  • 2 good handfuls watercress



  • Preheat the oven and then cook the burgers according to the packet.

  • Place the vinegar, sugar and salt into a smallish bowl. Add the prepared onion and cucumber to the bowl and coat. Leave to pickle.

  • Finely slice the cabbage and julienne the carrot. If you have a mandolin or a food processor, you can use those for really fine slices.

  • Next, place in a medium bowl with the juice of ½ the lime and the Wasabi Company Mayonnaise. Season with salt and pepper and mix well. Set aside.

  • Once the burgers are cooked, half your buns and layer with wasabi slaw, the burger, the pickles and top with a handful of watercress.
