Mushroom & Spinach Kievs with Veggie Rice

2 Goodlife Mushroom & Spinach Kievs
150g Wholegrain Rice, cooked and drained
1/2 Red Pepper
1/2 Yellow Pepper
1/2 Courgette
1tsp Extra Virgin Olive Oil
Fresh Thyme
Black Pepper


Pre heat oven to 200°C / Fan 180°C / Gas 6. Place the Goodlife Mushroom & Spinach Kievs onto a lightly oiled baking tray and cook in the centre of the oven for 20 minutes.

While the kievs are in the oven, cook the wholegrain rice as per the packet instructions, then drain and then set aside.

Chop the peppers and courgette into small chunks and sauté for 5 minutes in the olive oil. Turn off the heat, stir in the cooked rice and season with black pepper and thyme.

After 20 minutes, carefully remove the kievs from the oven and serve alongside your rice and vegetable mix.

All ovens vary, so just make sure the kievs are piping hot before serving.
