Curly Kale, Avocado & Sweetcorn Salad

  1. Wash the Kale and Rocket in cool water, and drain.
  2. Drain the Sweetcorn – you can eat as it is, or you can lightly cook in a dry pan to cook.
  3. Chop the Tomatoes.
  4. Add all ingredients to a bowl, adding the dressing if you’re using one, and mix together.
  5. Split the salad between two serving bowls, and enjoy.
