Charlotte’s Recipe for Root Vegetable Roasts:
Grated carrots, chopped butternut squash, parsnips, spinach, mushrooms and onions. Some chunky fairtrade peanuts, cashew nuts,and chickpeas. A dollop of tomato puree, a handful of breadcrumb and rice starch, dried potato, a splash of red wine vinegar, a blend of garlic, sea salt, parsley and black pepper
